Ingredients:

12 soft corn tortillas

2 tablespoons extra virgin olive oil

1 (1.25-ounce) envelope taco seasoning mix

12 yellow and white-swirled mozzarella cheese sticks

Cilantro sprigs or chopped cilantro, optional

Method - Gushing Goo Rolls

1. Preheat oven to 475°F.

2 Place a tortilla on a baking sheet. Brush one side of tortilla with oil, turn over and sprinkle with 1 teaspoon of taco seasoning. Using fingertips, smooth seasoning evenly

over tortilla. Top with a cheese stick and roll tightly. Lay seam side down on one end of ungreased baking sheet, Repeat with remaining tortillas.

3. Bake until cheese begins to melt, about 6 minutes.

4 Remove from oven and let stand 3 minutes to allow oozing cheese to set slightly. Add cilantro sprigs or sprinkle with chopped cilantro, ¡f desired. Makes 12 rolls
